Quick and easy. The syllabub is good with sliced peaches, dice mango, raspberries and blueberries.

Servings: 4

Berry Syllabub

2 cups sliced strawberries

3/4 cup whipping cream

1/4 cup lemon juice

1 tbsp grated lemon rind

2 tbsp sherry or sweet white wine

1/4 cup granulated sugar

Method

Divide strawberries amongst 4 glass dishes.

Combine cream, lemon juice, lemon rind, wine and sugar in a large bowl. Whisk with electric beaters until it is thick and holds its shape when the beater is lifted out of the mixture.

Spoon over strawberries and chill for one hour or overnight.
